Samgyepsal or fried pieces of pig belly is one of the most popular dishes in Korea. According to a survey conducted among tourists and the general public, more than 85% of people consider samgyepsal to be their favorite dish, and it is not surprising. If you literally translate the name of the dish, the three layers of meat that occur in the layered structure of bacon become clear. In some cases, the dish may be called ohepsal, or five layers of meat. This is relevant for those slices where there are more layers than usual.
Pork peritoneum is a rather expensive part of the carcass, even taking into account the difference in the cost of the product by region of the country. Koreans themselves do not breed pigs and export already harvested peritoneum from various countries. The Netherlands and Belgium are still considered to be the leaders in terms of supplies. Even taking into account the logistics chain, such meat is much cheaper than that produced domestically.
Serving samgyepsal is most often appropriate during dinner, but some people prefer to snack on it at lunchtime. Due to the fact that the meat is most often grilled, samgyepsal is often referred to as “Korean barbecue”.
Pork itself is quite a heavy product, so samgyepsal is served together with mushrooms, vegetables and herbs. It is this combination that will reduce possible discomfort after a meal, even before going to bed.

When serving, you should not forget about the sauces – ssamjan and kirimjan. The first goes with vegetables, the second with meat.
It is allowed to use both fresh meat and pre-marinated meat. But in the second case, exclusively spicy marinade is applied. When frying, the most important thing is the juice, so before cooking it is cut with scissors.
