Boiled rice is one of the most popular side dishes around the world, not only in China. It can be eaten on its own or as part of various dishes. Despite its popularity, not everyone can cook fluffy rice. It either undercooks or remains too sticky. In fact, it’s very simple; you just need to pay attention to a few things to get a fluffy and tender side dish.
One of the main rules is to remove the starch. To do this, simply rinse the rice. This will remove the stickiness and make the finished side dish as fluffy as possible. Most often, it is enough to rinse the rice five times. How do you know when the grains are sufficiently cleaned of starch? It’s very simple: the water remains clear after rinsing. The easiest way to do this is with a colander or sieve, rinsing the rice under running water.
But sometimes it is necessary to skip this step. Most often this is necessary for cooking risotto, when sticky rice gives a certain charm to the finished product. It is enough to rinse the grains once if you are unsure of the quality and cleanliness of the product.
If you need the rice to cook faster, soak it for 30 minutes or up to an hour beforehand. This will cut the cooking time almost in half. However, it is better to reduce the amount of water.
To get the fluffiest side dish possible, you just need to calculate the amount of water correctly. The standard recommendation is one part rice to two parts water. But this advice is very approximate, and when cooking different varieties, the amount of water will vary. It is enough to simply review the manufacturer’s recommendations on the package. Use a standard measuring cup for convenience. It is believed that a standard serving of side dish for one adult is 65 ml of grains.
Cooking time depends not only on the type of rice, but also on the method of preparation. You can make a fluffy side dish not only using a thick-walled saucepan, but also a multicooker and even a frying pan. We will tell you how to do it best.
First of all, it is best to use cookware with a thick bottom, so that the heat is distributed as evenly as possible. To start, simply bring the water to a boil, then add the rice. To prevent the rice from sticking to the bottom, stir it once. Then you just need to wait until it starts to boil, reduce the heat under the pot to a minimum, and cover the rice with a lid. If you don’t do this, the cooking time will increase several times. It is better not to stir the rice anymore, otherwise starch will be produced and the grains themselves will start to stick to the sides.
If you want to cook rice in a pan, as in Asian cuisine, be sure to use a wok or a pan with high sides. First, fry the rice in hot oil. You don’t have to use sunflower oil; the choice is up to you. Fry for no more than two minutes; it is important that all the grains are coated with oil, as this is the only way to ensure that the finished rice will be fluffy. Then simply pour boiling water over it and cover with a lid.
