Samgyepsal is probably the most popular meat dish from Korea, favored by the majority of the country’s population. For its preparation, the pork belly is used. It is this part of the carcass that stands out for its striped texture, and that is what samgyepsal is called – three layers of meat. On the one hand samgyepsal is a very simple dish, you just need to put the pieces of meat on the grill and grill until ready, on the other hand you should not forget about the peculiarities of cooking.
On the one hand, pork is not the healthiest and easiest product to eat regularly. But Koreans are quite original in their approach to solving this issue and simply serve samgyepsal together with fresh salad leaves, greens and samjang paste. So you will feel only a pleasant satiety after the meal, without heaviness.
For frying, predominantly fresh meat is used, without salt and spices. In this case, you get healthy whey protein of high quality. Just a few minutes of frying pork slices on each side is enough to get a portion of useful elements for muscle growth. Additionally, in one serving you will get a complex of vitamins from zinc, selenium, thiamine, phosphorus, iron and niacin.
The main thing is not to overcook the pork, otherwise all the benefits will be lost.
For cooking, it is best to use a grill. Only in this case you will get the most healthy and tasty dish. Before cooking, it is recommended to spray the surface of the grill with a small amount of oil, so that the pork does not stick during cooking. This rule applies even if you are using marinated meat rather than fresh meat.
The fire should be very high so that the roasting takes no more than 10 minutes on each side. Only in this case it is possible to preserve the juicy texture of the fibers. The vegetables should be put in a couple of minutes before the end of cooking.
In some regions, samgyepsal is steamed. The cooking time is practically the same, but the meat ends up much juicier. Vegetables are put in at once with the meat. Remember that pork is cut into portioned pieces before cooking, not after.
In addition to vegetables and traditional samjang pasta, you can consume steamed rice, kimchi, cold noodles with broth along with the meat.
